Summary

Oil and Oilseed Processing will review existing conventional and novel 'green' extraction methods to extract oils from seeds, reinforcing the positive aspects of some operations in the processing oil and oilseeds and presenting the new processing concepts, principles, effects on quality and stability characteristics, limitations and challenges. In addition, vegetable and animal-derived oils are of interest for industrial applications because of their similarity with plant oils and for their economic overproduction of seed oils and nutritional value. Current application and future perspectives for their utilization in the food and non-food industry will be presented. Finally, safety concerns regarding oil and oilseed processing and waste valorisation is an issue of high apprehension, will be deeply discussed in the book.
